Carrot Cake

A simple carrot cake recipe that’s perfect for Easter. I had so much fun baking this cake and I love how the little buttercream carrots look on the top!

Carrot Cake

A simple carrot cake recipe that's perfect for easter. Give this recipe a try its delicious!

Equipment

  • Two 8 inch round cake pans
  • Parchment Paper
  • Standing Mixer or Hand Mixer (for frosting)

Ingredients
  

Carrot Cake

  • 1 Cup Vegetable oil (more for greasing cake pans)
  • 2 Cups Ap Flour
  • 2 Cups Granulated Sugar
  • 1 tsp Baking powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Ground ginger
  • 1/4 tsp Ground nutmeg
  • 2 Cups Grated Carrots (freshly washed and peeled)

Cream Cheese Frosting

  • 12 Oz Cream Cheese (room temperature)
  • 2 Sticks Butter (room temperature)
  • 2 tsp Vanilla Extract
  • 4 Cups Powdered Sugar
  • 1 Cup Candied Pecans (for garnish)

Instructions
 

Prep

  • Preheat oven to 350 degrees F
  • Oil two 8 inch round cake pans with vegetable oil, and then line with a piece of parchment paper.

For the Cake

  • Mix sugar, vegetable oil, and eggs in a large bowl till well combined.
  • In a separate bowl mix flour, baking powder, baking soda, cinnamon, ginger, and nutmeg.
  • Add dry ingredients to wet ingredients and mix well. Then fold in grated carrots and mix well.
  • Divide batter into your 2 cake pans equally.
  • Bake cakes for 30-35 mins. (Check cakes after 30 mins and insert a toothpick in the center, if it comes out clean the cakes are done. If not bake for additional 5 minutes)
  • Let cakes cool in the pans for about 10-15 minutes. Then use a soft spatula to run along the sides of the pan and gently flip them out of the cake pans and remove the parchment paper from the bottoms. Cool Completely before decorating.

For the Frosting

  • In a standing mixer or using a hand mixer whip cream cheese till smooth. Add softened butter and whip till smooth and well combined. Be sure to scrape the sides of the bowl a few times. Next add your vanilla extract and powder sugar. Whip until frosting is nice and fluffy!

Time to build your cake

  • Cut tops of cakes with a large serrated knife so they are nice and flat. Save scraps to make crumble.
  • Finely cut candied pecans and combine cake scraps to form a crumble for the sides of the cakes.
  • Place one cake layer on plate or platter and add cream cheese frosting. Then top with the second cake layer and spread cream cheese frosting all over the tops and sides.
  • Add crumble to the sides of the cake and your finished
  • (optional: I added buttercream carrots to the top)
