Mix sugar, vegetable oil, and eggs in a large bowl till well combined.
In a separate bowl mix flour, baking powder, baking soda, cinnamon, ginger, and nutmeg.
Add dry ingredients to wet ingredients and mix well. Then fold in grated carrots and mix well.
Divide batter into your 2 cake pans equally.
Bake cakes for 30-35 mins. (Check cakes after 30 mins and insert a toothpick in the center, if it comes out clean the cakes are done. If not bake for additional 5 minutes)
Let cakes cool in the pans for about 10-15 minutes. Then use a soft spatula to run along the sides of the pan and gently flip them out of the cake pans and remove the parchment paper from the bottoms. Cool Completely before decorating.
