Strawberry Minnie Mouse Cupcakes

These Strawberry Minnie Mouse cupcakes are almost too adorable to eat. They are quick and easy to make. And so much to make with the whole family. You can substitute the strawberry cake mix for any flavor that you want as well!

Strawberry Minnie Mouse Cupcakes

These cupcakes are almost too adorable to eat!

Equipment

  • Standing Mixer or Hand Mixer
  • Silicone bow Mold
  • 12 Cupcake Liners
  • 2 Piping Bags
  • 1 Star tip

Ingredients
  

  • 1 Box Betty Crocker Strawberry Cake Mix
  • 3 Eggs
  • 1 Cup Water
  • 1/2 Cup Vegetable Oil
  • Strawberry Jam (for filling)

Buttercream Ingredients:

  • 2 Sticks Butter (at room temperature)
  • 1 Cup Shortening
  • 2 tsp Vanilla Extract
  • 3 Tbs Milk
  • 6 Cups Powdered Sugar

Toppings:

  • Edible Pearls (or sprinkles of your choice)
  • Mini Oreos (separated and filling removed)
  • White Chocolate Wafers (for melting)
  • Pink Food Coloring

Instructions
 

  • Prepare cake according to instructions on box.
  • Combine cake mix, eggs, water, and oil in a bowl.
  • Pour batter into lined cupcake tin.
  • Bake at 350 degrees F for 15-17 mins.
  • When cupcakes are done remove then from the cupcake tin and let cool completely before decorating!

Meanwhile start to make the bows

  • Heat chocolate wafers in a microwave safe bowl for 30 second intervals, stirring each time until melted. Do not over heat!
  • Add a drop of pink food coloring and mix well.
  • Pour chocolate into molds and scrape off the top so it is nice and flat. Place in freezer for 10 mins to set chocolate. Repeat until you have 12 bows.

Prepare the Buttercream

  • Begin to whip butter for a few minutes. Add shortening and mix until well combined scraping down the sides of the bowl a few times.
  • Add half of the powdered sugar and mix for a few minutes. Then add milk, vanilla, remaining powdered sugar, and one drop of pink food coloring. Whip for a few minutes until fluffy.
  • Fill Piping bag with some of the buttercream

Time To Decorate

  • Fill piping bag with Strawberry jam.
  • Using a knife cut a small hole and remove the center of the cupcakes. And fill with them with strawberry jam.
  • Pipe Buttercream frosting onto cupcakes in a nice swirl.
  • Add bows to tops. 2 Oreos for ears. And lastly sprinkles of your choice!
  • And enjoy!
